      The Red Label Aged Balsamic Vinegar produced by Acetaia San Giacomo for DLISH, has been aged for more than 12 years in a set of 9 long barrels and has scored more than 245 points (minimum for PDO  is 240). This highly protected and regulated process of producing traditional balsamic vinegar dates back to the year 1000 and is respected by Italian State approved producers. Using only grapes of the Reggio Emilia province, the vinegar is cooked over a flame until it has reached the desired density and color.
